🍞 **Head Baker / Chief Bakery Technologist**
🏢 **About Us:** A modern, high-capacity bakery that is a regional food industry leader, supplying fresh baked goods to thousands of consumers daily, is hiring a Chief Bakery Technologist. Our facility in Portland is equipped with automated baking lines, offering broad opportunities for implementing new technologies.
⚠️ **Important Note:** Although the HR system lists this role as "remote" to facilitate digital document approval, online seminars, and cloud-based financial reporting, the core of this job requires regular, on-site presence on the bakery production floor in Portland to control quality and manage the technological process.
🔬 **Core Duties:**
• Develop, implement, and continuously improve baking technologies for a wide range of bread and flour confectionery products.
• Organize and oversee the entire technological process, from raw material preparation to the final baked product.
• Draft technical instructions, recipe cards, and other normative documentation for bakery production.
• Optimize production processes to maximize yield, reduce technological waste, and minimize scrap.
• Conduct trial bakes when changing flour varieties or transitioning to new raw materials/yeasts.
• Oversee the production laboratory, implementing ISO quality standards and HACCP requirements.
🎓 **Requirements:**
• Degree in Food Technology (specialization: bakery, confectionery, or pasta production).
• 3+ years of experience as a Head Technologist or Lead Technologist at a large commercial bakery.
• Expert knowledge of rye-wheat, enriched, and laminated dough production, and modern oven mechanics.
• Deep understanding of FDA regulations, technical specifications, and food hygiene/sanitation standards.
