🏢 **About Us:** A powerful, modern meat processing complex specializing in premium sausages, meat delicatessen items, and semi-finished products made from eco-friendly raw materials is hiring an experienced Chief Meat Technologist. Our facility is located in Omaha, NE.
🌡️ **Core Duties:**
• Develop, implement, and continuously improve recipes for boiled, smoked, and raw-cured sausages, hot dogs, and various meat delicacies.
• Monitor strict adherence to established temperature and humidity regimes in thermal chambers, smoking rooms, and drying areas.
• Conduct incoming quality control of raw meat, auxiliary materials, spices, casings, and additives.
• Oversee the correct use and calibration of bowl cutters, grinders, vacuum stuffers, and clipper machines.
• Organize and lead the sausage department staff, distribute tasks, and conduct production training.
• Ensure strict compliance with sanitary/hygienic requirements, USDA/FDA food safety norms (HACCP), and finished product quality standards.
• Maintain technological and reporting documentation, calculate cost of goods, and track production yields.
🎓 **Requirements:**
• Degree in Meat Processing Technology or Food Science Engineering.
• 3+ years of experience as a Technologist or Chief Technologist at a meat processing plant or sausage department.
• Deep knowledge of meat processing technologies, production of various sausage groups, and delicatessen items.
• Understanding of modern meat processing equipment mechanics and microbiological raw material control methods.
