A premium, meat-focused steakhouse in the River North district of Chicago is hunting for a passionate Charcoal Grill Chef to command our open-fire station. Our kitchen is built around a massive, custom-built wood-burning hearth and a Spanish Josper oven. We source whole carcasses from local Midwestern farms and dry-age our beef in-house. We need a cook who understands the alchemy of smoke, heat, and time, and who can consistently deliver a perfect medium-rare.

Your domain on the line:
- Breaking down primal cuts, trimming silverskin, and preparing house-made dry rubs and compound butters.
- Managing the fire, adjusting the height of the grates, and utilizing different zones of the hearth for searing, roasting, and resting.
- Executing a diverse grill menu, from thick-cut bone-in ribeyes and whole branzino to charred seasonal vegetables and flatbreads.
- Maintaining rigorous sanitation standards in a high-heat environment and mentoring junior prep cooks on butchery techniques.

You must have at least 2 years of dedicated experience on a wood-fire or charcoal grill. A deep understanding of meat temperatures, carryover cooking, and fire management is essential.
