Our acclaimed artisan bakery and dessert atelier in the heart of Paris is seeking a passionate and meticulous Pastry Chef to join our culinary brigade. We supply a network of high-end boutique cafes and luxury hotels with fresh, handcrafted desserts daily. This is a hands-on role in a fast-paced, temperature-controlled production kitchen where precision, creativity, and a deep respect for classic French patisserie techniques are paramount.
Your daily culinary responsibilities:
* Baking a wide variety of sponges, puff pastries, choux, and shortcrust doughs strictly adhering to our proprietary recipe cards and fermentation schedules.
* Crafting complex fillings, mirror glazes, fruit curds, and tempered chocolate decorations for our signature entremets and tartlets.
* Assembling, leveling, and artistically finishing multi-tiered cakes, individual pastries, and seasonal macarons with an impeccable eye for detail.
* Managing the walk-in coolers, enforcing strict FIFO rotation, and ensuring absolute compliance with HACCP and local health department sanitation codes.
What we expect from our ideal candidate:
* A formal diploma in pastry arts or culinary arts, complemented by at least 2 years of hands-on experience in a high-volume patisserie or luxury hotel banquet kitchen.
* Exceptional manual dexterity, a refined palate, and the stamina to work early morning shifts in a cool, flour-dusted environment.
* A valid food hygiene certificate and a genuine passion for elevating the humble dessert into a visual and gustatory masterpiece.
What our atelier offers:
* A competitive base salary of €38,000 per year, paid monthly, with opportunities for overtime during holiday peaks.
