A celebrated, family-run trattoria in the historic center of Rome is inviting a talented and dedicated Hot Line Cook to join our kitchen brigade. We pride ourselves on preserving authentic regional recipes, utilizing farm-fresh ingredients, and delivering soul-warming dishes that honor Italian culinary heritage. We are looking for a cook who treats every plate with respect and thrives in the heat of a traditional, high-energy kitchen.
- Preparing classic, slow-simmered ragus, handmade pasta sauces, and traditional braised meat dishes strictly following our generational recipe cards.
- Executing precise butchery and portioning of veal, pork, and poultry, ensuring minimal waste and maximum flavor extraction for stocks and reductions.
- Managing the sauté station during peak dinner service, timing multiple complex orders simultaneously to ensure the entire table's food arrives hot and perfectly plated.
- Maintaining rigorous HACCP standards, sanitizing cutting boards, managing the walk-in cooler organization, and labeling all prep with date and time stamps.
- Participating in weekly inventory counts, tracking protein yields, and communicating with the Head Chef regarding daily market availability.
What you bring to the pass:
- A formal culinary diploma or equivalent apprenticeship, backed by 1-2 years of solid experience on a hot line in a traditional European or fine-dining restaurant.
- Deep knowledge of classical cooking techniques, sauce reduction, and the delicate handling of fresh, seasonal produce.
- Unwavering discipline, physical endurance to stand near hot stoves for 10-hour shifts, and the ability to communicate clearly over the noise of the kitchen.
- A current medical fitness certificate for food handling is mandatory.
