A celebrated, modern British gastropub in Soho, London, is searching for a driven and creative Executive Sous Chef to partner with our Head Chef. We focus on elevated, seasonal pub classics, utilizing the finest local produce and house-made charcuterie. We need a culinary leader who can command the pass, mentor our brigade of junior cooks, and drive the kitchen's financial and operational success.

▶ Collaborating on the development of weekly specials and seasonal menu changes, calculating precise food costings and yield tests.
▶ Running the daily pre-shift lineup, delegating station responsibilities, and ensuring every cook is prepped, focused, and ready for service.
▶ Managing the pass during peak Friday and Saturday dinners, expediting orders, checking for quality control, and maintaining a calm, authoritative presence.
▶ Overseeing inventory management, conducting weekly stocktakes, and building relationships with our premium meat and produce suppliers.

You must bring at least 3 years of experience as a Sous Chef or Senior Chef de Partie in a high-quality, fresh-food restaurant. A deep understanding of HACCP, allergen management, and kitchen profitability is essential. We offer a competitive salary of £48,000 GBP, a clear pathway to Head Chef, paid overtime, and a vibrant, passionate team culture.
